Oceania Cruises presents the industry's first onboard pastry academy, in collaboration with "The Butter Book"

Oceania Cruises presents The Floating Pastry Academy, a new multi-year training program for its onboard chefs, the first of its kind in the cruise industry, created in collaboration with the prestigious digital training platform The Butter Book®.

Oceania Cruises presents the industry's first onboard pastry academy, in collaboration with "The Butter Book" Thanks to this new training alliance, more than 200 pastry and bakery chefs from Oceania Cruises will complete a three-year program that will combine theory with practical assessments, both online and in person on board their ships.

The new Floating Pastry Academy establishes a pioneering long-term model for pastry and baking education at sea, offering Oceania Cruises' culinary talent a structured pathway to deepen their technical knowledge and perfect their craft.

This collaboration reinforces the luxury cruise line's commitment to offering "The Finest Dining at Sea®", while preserving and promoting French culinary heritage, consolidating the classic foundation that defines Oceania Cruises' culinary identity.

The initiative stems from a collaboration between Chef Eric Barale, Executive Culinary Director of Oceania Cruises and a member of the prestigious Maîtres Cuisiniers de France association, and Chef Sébastien Canonne, founder of The Butter Book and recipient of the Meilleur Ouvrier de France (Best Craftsman of France) title. This recognition, considered an international hallmark of excellence and mastery, is the highest professional distinction in France and is awarded to the country's finest artisans.

“This new academy reflects the respect we share for the traditions that have shaped us and our passion for culinary excellence at sea. Excellence begins with our team, and this program will reinforce the consistency, sophistication, and artistic precision that our pastry demands, while also boosting the professional development of our chefs,” said Chef Barale.

The Floating Pastry Academy will offer expanded training, higher service standards, and enhanced onboard experiences. Its launch transforms traditional training into a progressive and sophisticated program that includes:

  • Multi-year training itineraries adapted to the roles of pastry and bakery workers
  • Mandatory basic training for new team members
  • Specialization by function with defined progression
  • Digital courses led by chefs, assessments and practical exercises
  • Certification at every stage to strengthen long-term culinary careers

The academy complements Oceania Cruises' ongoing investment in French culinary heritage, including the introduction of La Table par Maîtres Cuisiniers de France, the first restaurant at sea created in collaboration with this institution, which will debut aboard the Oceania Sonata™ in 2027.
