Seabourn presents a new culinary program aboard the Seabourn Encore

Seabourn has unveiled a new Alaska-inspired culinary program, created specifically for the company's Alaskan season. Designed to reflect the region's unique ingredients, traditions, and spirit, the program incorporates a series of destination-centric food and beverage experiences that unfold throughout each voyage.

The new offerings include a series of culinary experiences that unfold between The Restaurant and The Colonnade. From a special welcome dinner at cruise departure to a family-style dinner during scenic sailing, each meal becomes an opportunity to connect with the region. Locally sourced seafood, wild ingredients, and collaborations with Alaskan artists shape a gastronomic experience that evolves throughout each itinerary.

Among the experiences highlighted were:

  • Surf & Sea Sailaway: an exclusive Alaska itinerary buffet dinner served at The Colonnade on the first night of every sailing from Vancouver or Juneau. The menu combines seafood and meats, with dishes such as Weathervane scallops and chilled Alaskan crab.
  • Alaskan Seafood Boil: an immersive three-course experience served at The Colonnade, centered around a single pot of king crab legs, Alaskan salmon, mussels, bacon-wrapped scallops, and prawns. The presentation includes paper tablecloths, Seabourn bibs, and waiters dressed in lumberjack shirts.
  • Fisherman's Table: an intimate shared table experience focused on salmon and halibut, served during scenic sailing near Sitka or Misty Fjords.
  • Midnight Sun Dinner: An elegant Alaskan-inspired dinner at The Restaurant featuring dishes such as wild mushroom consommé, Alaskan king crab salad, black cod confit in olive oil, and Baked Alaska. The menu design was created in collaboration with Alaskan native artist Crystal Worl.
  • Alaskan Earth & Ocean: a reinterpretation of the Earth & Ocean menu with Alaskan flavors, served at The Colonnade for two nights of each cruise.
  • Alaskan Brunch: a special brunch served once per cruise during a day of scenic sailing, with options such as Copper River smoked salmon, Alaskan crab Benedictine, or wild mushroom omelet.
  • Alaskan Fish & Chips: a themed lunch at The Restaurant featuring sustainably sourced fish, Alaskan seafood soup, and local beers.

The Midnight Sun dinner menu's artistic design was developed in collaboration with Crystal Worl, an Alaska Native artist whose work explores Indigenous identity, nature, and territory. This collaboration adds an extra cultural dimension to the dining experience, connecting guests with Alaska's artistic heritage.

The beverage menu enhances this destination-centric experience with a collection of signature cocktails and a selection of local beers available throughout the trip. The Glacier Fir and Inside Passage Punch cocktails are crafted with Alaskan glacial ice and regional ingredients.

The five signature cocktails created for the Seabourn Encore season in Alaska are: Glacier & Fir, Midnight Sun No. 20, Denali Bramble, Inside Passage Punch and Aleutian Sunset.

Weather permitting, the culinary program extends to the outer decks with experiences specially designed to complement the scenic cruises. Guests can enjoy caviar tastings, mulled wine and hot chocolate, as well as salmon and corn soup on deck.

Seabourn presents a new culinary program aboard the Seabourn EncoreThe itineraries include stops at iconic destinations like Juneau and Ketchikan, as well as lesser-known spots such as Alert Bay and the Inian Islands. All voyages include glacier viewing and more opportunities to visit Glacier Bay National Park than any other luxury cruise line.

Each departure will feature an expedition team of naturalists, historians, and wildlife experts, while the Ventures by Seabourn program will offer optional Zodiac excursions, kayaking, and guided hikes. Guests will also receive a complimentary Helly Hansen PolarShield parka.
