Virgin Voyages adds an Indian restaurant to the Valiant Lady

Indian cuisine is experiencing a global renaissance: celebrated in the Michelin Guides, transforming haute cuisine, and finally receiving the recognition it deserves as one of the world's most complex and nuanced culinary traditions. This May, Virgin Voyages takes that evolution to the sea with the debut of Ariya, a modern Indian restaurant opening exclusively aboard Valiant Lady after its dry-dock season.

Valiant Lady

Developed in collaboration with Indie Culinaire by renowned chef, television personality and cookbook author Maneet Chauhan, Ariya presents Indian cuisine with breadth and precision, combining saffron-infused classics with coconut-rich coastal flavors and vibrant regional specialties.

The restaurant's name also has its own story. Ariya was Sir Richard Branson's great-great-grandmother, a traveler from the coastal city of Cuddalore in Tamil Nadu. She believed that food could cross oceans more easily than language. That belief is the foundation of this restaurant, which celebrates how a shared meal bridges the gap between worlds.

Ariya embodies that philosophy in every detail from the moment passengers arrive.

Each night, Ariya transforms the Razzle Dazzle at the Valiant Lady, a breakfast and brunch spot by day, into a sanctuary for 220 diners. The entrance hall sets the tone from the very first moment: soft lighting, a relaxed pace, and a clear indication that the next few hours deserve our undivided attention.

The interior draws inspiration from the intensity and rhythm of India's spice markets, reflecting the richness of turmeric, cardamom, and pepper. Layered wood tones and plant-fiber wall coverings add depth and texture, while hammered metals and woven cane details lend an artisanal touch. Together, these elements create a sensory experience rooted in color, culture, and craftsmanship. The space is both intimate and vibrant. With cozy, Cuddalore-inspired private dining areas, a semi-private dining room framed by decorative screens that evoke the interior of a traditional jewelry box, and a bar accompanied by an eclectic DJ soundtrack featuring Indian classics, Bollywood hits, Punjabi pop, and global sounds, the space creates a vibrant and feel-good atmosphere.

Virgin Voyages has built its reputation on restaurants helmed by chefs who rival the best on land. Ariya is the latest expression of that commitment, centered on a cuisine defined by regional nuances, techniques passed down through generations, and deeply communal rituals.

At Ariya, the menu takes you on a journey across India without forcing anyone to choose just one region. Complex spices are woven into each beautifully presented dish, their aromas filling the space and inviting you closer even before the food arrives at the table. Chaat ,one of India's great street food traditions, is at the heart of Ariya: crunchy, tangy, and deeply satisfying. Standout dishes include Lamb Shank Biryani, Goan Curried Mussels, Malabar Coconut Crab Cake, Avocado and Puffed Rice Chaat, and Pistachio-Crusted Tandoori Snapper. Ariya's bar draws inspiration from the same regional influences as the cuisine, creating a cocktail menu as carefully curated as the food. Each table begins with a complimentary welcome sip: jaljeera, a chilled blend of tamarind and cumin that awakens the palate.

Among its signature cocktails are the Maharani Morning with rose, cardamom, and sparkling wine; the Golden Hour Spritz layered with saffron and honey; the Saffron & Silk with Scotch whisky and toasted coconut smoke; the Bangalore Old Fashioned with jaggery and cardamom; and The Seventh Leaf, a non-alcoholic botanical creation. A carefully curated selection of wines, artisanal Indian spirits, and traditional chai tea service complete the beverage experience at Ariya.

“Ariya is the next chapter in our culinary collection, which we’ve built with real intention from day one. Every restaurant we open is a statement about what we believe dining at sea can be, and Ariya says something we haven’t said before. Indian cuisine, with this level of technique and so much heart, belongs on Valiant Lady. Guests who have already sailed with us will understand immediately. And for those who haven’t, Ariya could be the reason to book,” says Nirmal Saverimuttu, CEO of Virgin Voyages.

“Indian cuisine is finally receiving the global recognition it has always deserved, and our passengers will be able to experience it at its finest with Chef Maneet. The spice combinations alone will amaze people. That’s the goal: for every passenger sitting at that table to think, ‘I didn’t know food could do that,’” adds Chef Levi Mezick, Senior Director of Culinary Program Development at Virgin Voyages.
