Explora Journeys has announced the launch of its new Italian concept for Anthology, a signature haute cuisine experience that offers guests a gastronomic adventure through the landscapes of Italian cuisine.
Franck Garanger, head chef of Explora Journeys, stated: “Anthology is more than a restaurant; it’s a journey through the gastronomic landscape of Italy. For me, Italian cuisine is about respecting the people, the ingredients, and the traditions that have been passed down from generation to generation. It’s about sharing the soul of Italy, dish by dish. It will be a culinary reflection of the rich variety, aromas, and flavors of Italian cuisine, which I am deeply passionate about.”
Franck discovered his passion for cooking at a young age. He began his career as an apprentice at the Michelin-starred Le Vert D'Eau restaurant in Angers, under the French master chef Jean-François Piers.
Before joining Explora Journeys, Franck worked in numerous world-renowned restaurants alongside some of the most notable culinary names, including Paul Bocuse, Alain Passard, and Thierry Marx. In addition, Franck spent over a decade working for luxury ocean travel brands in prominent culinary roles.
Each dish on the menu is a blend of Italy's finest regional ingredients and flavors, crafted to highlight the cultural brilliance and culinary heritage of the Mediterranean. The restaurant tells the story of Italy's culinary excellence through a creative expression of culture, heritage, and passion.
The menu is an ingenious display of creativity, showcasing a variety of regional flavors and authentic ingredients. Highlights include the Mediterranean sea bass with Arabica coffee and tonka bean, and the scallop cannelloni with black truffle. Vegan options are also available for every dish.
Guests are invited to discover the different styles and flavors of Italian cuisine, from the famous and delicious flavors of the truffle-rich Piedmont countryside to the renowned specialties of southern Italy.
