Silversea ’s newest ship , the Silver Nova℠ , offers guests a variety of new culinary experiences across nine dining venues, including six complimentary options. With the twelfth addition to its fleet, the cruise line has also evolved its signature restaurants, enhanced its menus with a wide selection of vegetarian cuisine, and introduced a new look to its immersive SALT culinary program. Offering both formal and casual dining, and cuisines ranging from international to specialty, the Silver Nova provides guests with unparalleled variety at any time of day.

Birgit Vadlau, Vice President of Hotel Operations at Silversea, comments: “Our guests see gastronomy as a way to truly experience a destination. The Silver Nova demonstrate the importance of culinary experiences to our product offering, providing diverse cuisine in enhanced spaces. At the heart of its culinary offering is SALT, an ever-evolving program that is reinvented on board the Silver Nova with stunning spaces and the newly launched SALT Chef’s Table.”
Each Silver Nova restaurant has been meticulously enhanced in every detail, from its architectural designs, with particular attention paid to lighting and material selection, to the artwork and elegant silverware. The enriching culinary innovations include:
SALT CHEF'S TABLE: AN INTIMATE AND INTERACTIVE GASTRONOMIC EXPERIENCE.
Silver Nova introduces a new way for Silversea guests to immerse themselves in local culture with SALT Chef's Table. A hands-on laboratory by day, the SALT Lab on Deck 10 transforms into a showcase for the creative expression of Silversea's chefs each evening.
LA DAME®: ENHANCED TASTING MENU WITH CAVIAR AND EXQUISITE WINE PAIRINGS
The 68-seat La Dame restaurant delights guests with an enhanced dining experience that blends French culinary heritage with modern innovation. Guests can choose from a seven-course tasting menu or explore à la carte options.
KAISEKI®: AN IMPROVED WASHOKU-INSPIRED MENU
The Silver Nova offers a completely new dining experience at its 40-seat Kaiseki restaurant, taking guests on a culinary journey that celebrates the traditions, aesthetics, and flavors of Japanese cuisine. The new offering embraces the traditions of Washoku, a UNESCO-listed Japanese culinary tradition, paired with an exclusive selection of sakes, Japanese whiskies, and TWG teas and tea cocktails.
WITH AN EXPANDED SELECTION OF VEGETARIAN, VEGAN AND PLANT-BASED OPTIONS
With Silver Nova, Silversea has expanded its selection of vegetarian, vegan, and plant-based dishes, enriching guests' culinary experiences with the indulgence of choice. The enhanced culinary program has diversified the menus across the ship's nine onboard dining venues and will be rolled out across the fleet at a later date. To ensure the new menu options meet Silversea's uncompromising culinary standards, the company collaborated with renowned Chef Jean-Luc Rabanel, a pioneer in green gastronomy.
