Explora Journeys will feature three-Michelin-starred Italian chef Mauro Uliassi to offer a culinary experience aboard the first ship in its fleet, EXPLORA I. Guests can enjoy his menu at the Anthology restaurant during the inaugural cruise, which departs from Southampton on July 17 and arrives in New York on September 25. In one of the 11 culinary experiences available onboard, Chef Uliassi and his team will present a masterful blend of tradition and modernity inspired by Italian gastronomy.

Uliassi's dishes reflect his passion for the sea and his deep respect for the environment. They are based on the unique flavors and textures of the ocean, offering a sustainable and locally sourced gastronomic experience.
Jason Gelineau, Head of Product at Explora Journeys, expressed his enthusiasm for this collaboration: “It is an honor to welcome Chef Uliassi aboard EXPLORA I to offer our cruisers the opportunity to savor his exceptional culinary creations. By combining contemporary techniques and creativity with a deep respect for each region’s gastronomic heritage, our chefs have a single goal: to create memories that will stay with guests long after their journey has ended.”
The Anthology restaurant at EXPLORA I is conceived as a culinary space where guest chefs create their menus in collaboration with Franck Garanger, Head of Culinary at Explora Journeys. The aim is to showcase cuisines from around the world, paired with wines from renowned wineries.

Chef Mauro Uliassi also expressed his satisfaction with this partnership: "I am especially excited to work with Explora Journeys and showcase my culinary creations to EXPLORA I guests. It's a unique opportunity to share my vision of Italian cuisine while also highlighting the beauty and sustainability of the ocean."
Guests of EXPLORA I can enjoy a menu created by Chef Uliassi, featuring only the freshest and finest ingredients, mostly sourced from local producers. The restaurant will offer a tasting menu and wine pairing options.
The christening ceremony for EXPLORA I will take place in Civitavecchia on July 8. Following this, she will depart from Southampton on July 17 for her maiden voyage, a 15-night cruise through the Norwegian fjords and the Arctic Circle, ending in Copenhagen.
