Oceania Cruises has unveiled the restaurants and culinary experiences aboard its newest ship, Vista, scheduled to debut in early 2023. The Oceania Vista will offer a total of 12 dining options, unprecedented on a ship of this size. Of these twelve, four will be entirely new and exclusive to the Vista.
Ember will be the flagship addition to Oceania Cruises' family of restaurants. Open for lunch and dinner, it will feature a menu of creative American recipes blended with time-honored classics. In this inviting space, guests can enjoy polenta-braised short ribs, grilled swordfish with asparagus, crab cakes with spicy aioli, and a Cobb salad with smoked chicken, to name just a few of the menu's delights.
Aquamar Kitchen will present a decidedly fresh perspective on food and wellness. Whether you're a dedicated flexitarian or a passionate foodie, Aquamar Kitchen will offer plenty of guilt-free indulgences. Breakfast selections include cold-pressed juices and superfood smoothies, hearty homemade granolas and avocado toast, energizing organic bowls, and delicious breakfast wraps. For lunch, dozens of healthy and tempting dishes are on offer, such as slow-roasted organic salmon with quinoa tabbouleh and lemon tahini, yellowfin tuna tacos with white cabbage slaw, or even a crispy chicken sandwich on freshly baked whole-wheat bread.
The Grand Dining Room will be the luxurious culinary grand dame of Oceania Cruises' culinary world. Here, guests will enjoy a delightful dining experience in a truly magnificent and inspired room whose ambiance is as exquisite as its cuisine. Each day will feature a variety of options, from signature Jacques Pépin classics to an incredible array of global flavors and an all-new Executive Chef tasting menu. Menus will change daily with a wide selection of at least 10 appetizers, soups, and salads, and 10 main courses for dinner, along with healthy options such as Aquamar Vitality Cuisine.
Polo Grill will delight diners with the ultimate classic steakhouse experience. Lavishly decorated with a wealth of custom woodwork, crisp white linen tablecloths, and black-jacketed waiters, it sets the tone for an elegant dining evening. Every dish is the very definition of a traditional favorite, especially the meat dishes, all of which are USDA Prime Certified Black Angus, dry-aged for 28 days, while succulent seafood dishes like the whole Maine lobster au gratin are also classics.
Toscana will showcase an evolution of Tuscan cuisine in a truly Italian setting of rich Chianina leather, hand-blown Venetian glass, and Carrara marble. Evolving from generational family traditions, many of the recipes originated with the mothers and grandmothers of the cruise line's Italian culinary staff. Presented on elegant, bespoke Versace china, the masterfully prepared dishes will exemplify the essence of Tuscany and celebrate Italy's culinary passion. Perhaps the evening will begin with octopus carpaccio with champagne vinaigrette or artichoke and Parmesan timbale with black truffle sauce, followed by classic dishes such as hand-rolled gnocchi with pesto, a rich risotto with lobster medallions and shallots, or a seared fillet of sea bass finished with Sorrento lemon, Chardonnay, and capers.
Red Ginger will exude harmony and tranquility while evoking the boldness and subtlety of the extraordinary Pan-Asian dishes created by Oceania Cruises' chefs. Like the dining room itself, the Thai, Korean, Japanese, and Malaysian specialties are a blend of spicy and soothing, savory and sweet, sure to please virtually every palate. We might begin with a spicy roast duck and watermelon salad with cashews, mint, and Thai basil. Savor Malaysian beef penang with coconut rice and paratha roti. Or try the Thai vegetable curry with sweet potatoes, eggplant, mushrooms, and basil in a green curry sauce. At Red Ginger, the taste sensations are as breathtaking as the visual ones.
Terrace Café offers the ultimate casual dining experience any time of day, whether inside the luxuriously appointed dining room or al fresco at one of the tables shaded by the elegant terrace. At breakfast, Terrace Café offers a seemingly endless selection of delectable sweet and savory temptations, including eggs, omelets, pancakes, and waffles made to order. At lunch, an extensive menu of internationally inspired dishes is complemented by flavorful grilled meats and the magic of the pizza oven. In the evening, we'll enjoy dinner in comfortable relaxation as the chefs serve an astonishing array of dishes, from grilled lobster tails, fish, fillets, and steaks to freshly made, hand-cut sushi and sashimi. Waves Grill is a casual, colorful, and perhaps slightly playful place to dine, featuring all-American favorites. Located in a spacious, shaded area near the pool and Terrace Café, Waves Grill offers an extensive and delicious menu from lunch through late evening, perfect for that much-needed snack or meal after an adventurous day of sightseeing on land. Watch the chefs grill gourmet burgers, succulent seafood, and to-order sandwiches in the open kitchen, pairing them with sides like fresh salads, coleslaw, and crispy hand-cut fries. There's always room for dessert, and the selection here is too good to pass up. Try a homemade sherbet, a made-to-order hot chocolate ice cream, or a thick, hand-dipped milkshake.
The Culinary Center will reach a new level of culinary immersion as chef instructors share their illuminating perspectives on culture and cuisine through the lens of food and wine. Here, guests can not only participate in lively hands-on instruction but also indulge in culinary delights in the Culinary Center's new oceanfront dining room with private group dinners or one of the exclusive and acclaimed food and wine pairing experiences.
