Holland America Line 's Canaletto specialty restaurant has updated its menu, focusing on fresh pasta and authentic Italian dishes.

The restaurant, exclusively for dinner, has added several new selections and cocktails. There's also a three-course menu that includes small plates, homemade pasta, starters, and desserts, plus a daily special.
“The pasta we make on board is exceptional, and we want the updated menu to continue to reflect an Italian experience focused on freshness and authenticity,” said Michael Stendebach, HAL’s vice president of food and beverage.
Diners can begin with a small plate. The popular antipasto platter includes Parma ham, finocchiona salami, truffle salami, Terre Ducali coppa, Parmigiano Reggiano, and Sicilian olives. Other options include beef and sage meatballs, burrata, Canaletto salad, and grilled tiger prawns.
On the other hand, homemade pasta is the star of the starters. New dishes include casarecce with Genoese pesto, paccheri with Italian sausage, grilled sea bass and mussels, and a trenette of scallops and squid.
Among the dishes that remain on the menu are the beef rib with Chianti and the chicken breast with a herb and Parmesan crust. The ossobuco, which used to be served once a week, is now offered daily.
The Canaletto's dessert menu includes tiramisu, baked ricotta and lemon cheesecake, chocolate and hazelnut tart, affogato, and a trio of gelatos. The gelato is made fresh daily on board.
The new cocktails include an Aperol spritz, a spumoni (made with Holland America Line's De Lijn gin), a Tuscan lemon drop, and a Canaletto bellini with a selection of fruit purées. The menu also features a selection of sparkling, white, and red wines, as well as beer and digestifs.
Canaletto has a surcharge of $25 per person and is included as a specialty dining option in Holland America Line's "Have It All" price package.
