Seabourn has announced the launch of Earth & Ocean, a culinary philosophy that combines gourmet ingredients from around the world with the company's long-standing commitment to destination-inspired gastronomy. This philosophy will shape the menus, activities, and experiences across all its ships, uniting local flavors, exceptional gourmet ingredients, and personalized service through culinary offerings both at sea and on land.
Earth & Ocean is based on the idea of connecting passengers with each destination through the products they select, the dishes they serve, and the experiences they share. The initiative reinforces Seabourn's commitment to gastronomy linked to the places it visits and expands the possibilities for discovering each destination through food and drink.
The philosophy takes its name from Seabourn's Earth & Ocean restaurant, which opened in 2018 with changing menus made from fresh, locally sourced ingredients. Since then, the concept has evolved beyond the restaurant and has begun to influence the dining options, culinary activities, and experiences offered across the fleet and onshore.
“Our Earth & Ocean philosophy was born from passenger feedback on the experiences they value most: exceptional gastronomy, personalized service, destination-inspired cuisine, and meaningful connections to the places they visit,” explained Michael Stendebach, Seabourn’s senior vice president of Passenger Experience and Product Development. “We saw how much our passengers appreciated the Earth & Ocean restaurant and decided to expand the concept across the entire fleet, creating a culinary philosophy that blends local flavors, gourmet ingredients from around the world, destination-inspired experiences, and the artistry of gastronomy that defines Seabourn.”.
Earth & Ocean balances two complementary priorities: reflecting the destinations Seabourn visits and seeking excellence wherever it is found.
The menus will feature regional specialties, seasonal produce, and local culinary traditions, along with gourmet ingredients selected from around the world for their quality, flavor, and preparation. At The Restaurant, the menus will incorporate the "Chef's Market Finds" concept, highlighting local ingredients from the regions each ship visits.
Regional dishes include fresh rock cod with buttered spinach, rocket and green apple in Alaska; pink snapper with truffled spaghetti squash in Australia and New Zealand; and fresh Arctic char with baby potatoes and a butter, lemon and caper sauce in Northern Europe.
Together, these proposals will result in gastronomic experiences that reflect both the personality of each destination and Seabourn's culinary standards.
The philosophy embraces a broad vision of fine dining, going beyond the ingredients traditionally associated with luxury to also emphasize the freshness of the products, meticulous presentation, skillful preparation, and attention to detail. Studies conducted by Seabourn among its passengers identified these elements as essential aspects of food and service quality, while destination-inspired cuisine received positive feedback from various traveler profiles.
Earth & Ocean explores two fundamental concepts for understanding the relationship between place of origin and flavor: terroir and merroir, which represent the unique characteristics that the terrestrial and marine environment brings to food.
In Alaska, mineral-rich glacial waters help define the characteristics of wild salmon and king crab. In the Mediterranean, olive groves, coastlines, and culinary traditions passed down through generations influence all kinds of fish and seafood dishes, as well as regional oils and wines.
These connections between territory and flavor allow the story of each destination to be told through its gastronomy.
Culinary experiences at sea and on land
Throughout the next year, Earth & Ocean will go beyond restaurant menus with chef-led experiences, visits to local markets, and new activities designed to bring passengers closer to the culinary cultures of each destination.
Travelers will also find new culinary offerings inspired by the places visited, which will be progressively rolled out across the fleet. These include regional lunches during scenic cruises, seafood-themed gastronomic celebrations, revamped menus at the Patio restaurant, fresh pasta, and an expanded caviar program.
These experiences will allow you to discover the flavors, traditions, and people that contribute to defining the identity of each destination.
The art of gastronomy with Seabourn
Earth & Ocean also incorporates the elements that characterize the Seabourn dining experience. The menus are carefully selected, the dishes are prepared with a commitment to excellence that extends from preparation to presentation, and each experience features personalized service and special attention to detail.
“Our guests consistently tell us that gastronomy is a fundamental part of the travel experience and that personalized service is at the heart of the Seabourn experience,” said Kacy Cole, Chief Marketing Officer of the company. “Our new Earth & Ocean philosophy brings these priorities together through thoughtfully crafted menus, exceptional ingredients, destination-inspired flavors, and the warmth that defines Seabourn.”.
