Relais & Châteaux Hotel Heritage Madrid celebrates the awarding of its first Michelin Key, the recognition with which the Michelin Guide distinguishes the hotels that offer the most exceptional accommodation experiences in the world.
The distinction places Relais & Châteaux Hotel Heritage Madrid among the Spanish hotels recognized with a Michelin Key for the first time and highlights a way of understanding hospitality in which architecture, design, service and gastronomy build an experience deeply linked to the personality of the place.
In the heart of the Salamanca district, behind the façade of a historic early 20th-century building, the Relais & Châteaux Hotel Heritage Madrid preserves the spirit of Madrid's grand private residences and reinterprets it through a contemporary lens. This distinctive identity is reflected in its membership in Relais & Châteaux, the international association that brings together independent hotels and restaurants worldwide, managed by their owners and united by a unique approach to hospitality and gastronomy.
Founded in France in 1954, Relais & Châteaux brings together properties with their own unique character—from castles and palaces to estates, historic mills, and country villas—closely linked to the places they inhabit. They all share a philosophy based on preserving the art of living, celebrating authenticity and local culture, and making gastronomy an essential part of the experience, along with a firm commitment to environmental protection.
The spirit of a private residence in the heart of Madrid.
The story of Relais & Châteaux Hotel Heritage Madrid begins in its own building. Protected by the Commission for the Protection of Historical, Artistic and Natural Heritage for the value of its architectural elements, the property has been restored respecting its original essence and recovering the elegance of the Belle Époque.
The interior design, by Lorenzo Castillo, creates an eclectic and timeless atmosphere through lacquered woods, polychrome marbles, velvets, hand-painted wallpapers, fabrics, and carefully selected pieces. A significant collection of European antiques and artworks from the 18th and 19th centuries completes interiors conceived to move away from the conventions of a typical hotel and closer to the intimacy of a private residence.
Its 46 rooms continue this same aesthetic language, combining the building's classicism with contemporary comfort. Each space maintains its own personality and makes the fine materials, furniture, textiles, and artwork an integral part of the hotel experience.
The character of the Relais & Châteaux Hotel Heritage Madrid extends to its common areas as well. From its lounges to its terrace and bar on the seventh floor, with views over the rooftops of Madrid, the hotel offers different settings from which to discover the city while maintaining a sense of intimacy.
A cuisine with identity.
Gastronomy is another of the great pillars of Relais & Châteaux Hotel Heritage Madrid. At its helm is Mario Sandoval, a chef with two Michelin stars, whose menu is based on a meticulous selection of fresh, natural, and locally sourced products, many of them from the family estate, El Jaral de la Mira.
This philosophy comes to life at Haroma, the hotel's restaurant, where Sandoval offers signature cuisine that evolves with the seasons, reinterpreting traditional recipes and ingredients from a contemporary perspective. In this approach, the origin of each ingredient, its seasonality, and its connection to the land are integral to the culinary experience itself.
The same philosophy guides other moments of the day. Breakfasts feature homemade preparations and products selected for their origin and quality—from artisanal jams, natural honey, and freshly made churros to butter from local producers, Iberian charcuterie, and artisanal cheeses—while the menus evolve according to the products available on the farm and at the market.
The gastronomic experience can begin or end outside of Haroma: from the street-level terrace to the seventh-floor bar, where cocktails are accompanied by views over the city.
“Working with products that are born and raised on our farm allows us to control every detail, from the origin to the final result on the plate. It is a way to guarantee not only gastronomic excellence, but also the emotional connection with what we serve,” explains executive chef Mario Sandoval.
A new Key for Madrid hospitality.
With the addition of Relais & Châteaux Hotel Heritage Madrid, the 2026 Michelin Guide selection includes 122 distinguished hotels in Spain, 100 of which have a Key. Relais & Châteaux Hotel Heritage Madrid is among the 16 new additions to this category this year.
This recognition reinforces the hotel's position within the Madrid hotel scene and acknowledges a proposal built on uniqueness: a building with history, interiors with their own personality, friendly hospitality, and a gastronomy closely linked to the product and the territory.
The first Michelin Key for Relais & Châteaux Hotel Heritage Madrid thus becomes a new chapter for a hotel that finds its particular way of interpreting contemporary luxury precisely in its intimate character and attention to detail.
